Abstract

This research addresses the importance of food transformations and changes in towns in southern Mexico City, particularly in San Lorenzo Huipulco, in the Tlalpan delegation. It analyzes some of the social and historical relationships that the inhabitants had with the agricultural environment and their natural heritage, as well as the effect of urban development on the identity and culture of a community with rural origins.
