Abstract

This paper reflects on the conceptual relationship between traditional cuisines and Mexican gastronomy, their regional and local recognition, their promotional policy—discussed in various contexts (diverse, global, multicultural) and a supposed sense of democratization—that begs the question: are these gastronomic policies an ethnophagic tool?
